Avocado, Tomato and Cucumber Salad

Whenever we go to our Grandmother's in the Spring or Summer, Ensley and I always have this salad! It's so easy to make it's ridiculous!

Ingredients
2 medium avocados, peeled, seeded, and chopped
2 medium tomatoes, diced
1 cucumber, chopped into half moons
1/2 cup (more if needed) Italian dressing, like Newman's Own (I like them because they give to charity)

Directions
1. Combine all ingredients in a medium bowl; stir. 
2. Cover and chill for at least an hour. 
3. Yes, that is really all there is to it.

Royar's Summer Reading: South Of Broad


Against the sumptuous backdrop of Charleston, South Carolina, South of Broad gathers a unique cast of sinners and saints. Leopold Bloom King, our narrator, is the son of an amiable, loving father who teaches science at the local high school. His mother, an ex-nun, is the high school principal and a well-known Joyce scholar. After Leo's older brother commits suicide at the age of thirteen, the family struggles with the shattering effects of his death, and Leo, lonely and isolated, searches for something to sustain him. Eventually, he finds his answer when he becomes part of a tightly knit group of high school seniors that includes friends Sheba and Trevor Poe, glamorous twins with an alcoholic mother and a prison-escapee father; hardscrabble mountain runaways Niles and Starla Whitehead; socialite Molly Huger and her boyfriend, Chadworth Rutledge X; and an ever-widening circle whose liaisons will ripple across two decades-from 1960s counterculture through the dawn of the AIDS crisis in the 1980s.

I am absolutely 100% in love with this book.  I've read The Lords of Discipline and My Reading Life, but neither compare to South of Broad.  The characters are believable, the setting is perfect and the plot is fast-moving.  Not every author can split a book into five parts while switching time periods, but Conroy does it without skipping a beat. I highly recommend this as a lovely Southern summer read!

Guy Harvey

When running around during the summer, my go to outfits are either nike shorts or chino shorts and t-shirt or a knit.  I've had trouble finding "nice" t-shirts that I can wear out, and I've found much success with Guy Harvey.

Royar's Summer Reading: Love The One You're With


This is the second Emily Giffin book I've read, after Something Borrowed, and I could not put this down.  It tells the story of Ellen and Andy, a newly married couple whose marriage is perfect.  It reminded me of Something Borrowed in that Ellen is best friends with Andy's sister Margot.  Ellen and Margot meet when they are college roomates at Wake Forest.  Margot is a true southern belle (I completely identified with her!) and Ellen is from Pennsylvania.  After graduation, they both move to New York and Ellen begins dating Leo.  Fast forward a few years and Ellen is a successful photographer and married to Andy.  When out of the blue she receives a call from Leo one rainy afternoon, she begins to re-think all her life choices.  This was a super fast read and I love Giffin's writing style. I whole-heartedly recommend it!

Cross-Body Bags

When I go out during the summer, I hate holding things, so I love using my cross-body satchel! It's perfect for concerts, dinners out and basically everything!

I have this Dooney & Bourke in a similar style and the color is adorable!

First Day of Summer

I can't believe I'm on summer break already! This past week has completely flown by and now it's time for camp! Today is my 'packing day' as tomorrow it's off to North Carolina for a little rendez-vous with vBh!  Today will consist of:
One {or two} of these..

and hopefully only one trip here!

After I get back from camp, I have three weeks or so and then I go to China for a week! I've never been out of the country before and I'm super excited!  Then PM and I are hoping to go see a few colleges before cross-country starts again!

Other than those three big things, I am just hoping to drink a lot of sweet tea, get a nice tan and be on the water as much as I can!
